Summer Recipe: Pizza Squash and Roasted Vegetables

Welcome back! If you’re looking for something new to try for summer, check out my recipe below on pizza squash and vegetables!

Ingredients:

  • Squash
  • Tomato sauce of choice
  • Mozzarella cheese
  • Vegetables
  • Olive oil

☆ Pre-heat oven to 425 degrees.

☆ Cut squash in half and take out seeds

☆ Place squash on baking sheet

☆ Add 1/4 cup of your preferred tomato/pizza sauce onto each side of the squash

☆ Add 3 oz of mozzarella cheese to the squash

☆ Drizzle olive oil, salt and pepper on top

☆ Cut and dice choice of vegetable (I used brussel sprouts, carrots, and green peppers), season with cuban seasoning and olive oil.

☆ Cook for 25 minutes

Vegetable Slaw & Egg Toast

Vegetable Slaw & Egg Toast

Hi everyone! Today I’m sharing with you one of my favorite breakfast recipes. Super quick and simple, it’s filling and delicious! Check out the recipe below:

Ingredients:

  • Bread of choice (I usually use whole grain or whole wheat)
  • 2-3 eggs (depending on how much you want)
  • Slaw of choice (I usually use a broccoli or mixed slaw)
  • 1/4 of a yellow onion
  • 1/2 of a bell pepper

Step 1: Saute the onions, slaw mixture, and red pepper in a frying pan until the onions are translucent. Season to your preference. When done, set aside. While doing this, put bread in the toaster.

Step 2: Scramble eggs in a bowl and add the eggs to pan, and cook.

Step 3: Cut toast in half, spread slaw mixture over bread and then add eggs

And that’s it! Super simple and easy to make, nothing complicated.
