Hi everyone! Today I’m sharing with you one of my favorite breakfast recipes. Super quick and simple, it’s filling and delicious! Check out the recipe below:
- Bread of choice (I usually use whole grain or whole wheat)
- 2-3 eggs (depending on how much you want)
- Slaw of choice (I usually use a broccoli or mixed slaw)
- 1/4 of a yellow onion
- 1/2 of a bell pepper
Step 1: Saute the onions, slaw mixture, and red pepper in a frying pan until the onions are translucent. Season to your preference. When done, set aside. While doing this, put bread in the toaster.
Step 2: Scramble eggs in a bowl and add the eggs to pan, and cook.
Step 3: Cut toast in half, spread slaw mixture over bread and then add eggs
And that’s it! Super simple and easy to make, nothing complicated.
